Tereul to Valencia is a rail trail, downhill bit with some tricky, deep gravel at times. The issue will be getting to Tereul. There's somes wonderful riding in that area - glorious mountains and quiet roads but a real lack of services. Weather, other than just wind will be a very important factor.
Ditto in Catalunya - lots of interesting bike trails and quiet roads but it's very, very hilly. Again, weather - not just wind - is a big factor. It can change rapidly.
