Nice riding that is hilly but not difficult and similar to where Datlas rides, maybe slightly gentler, is further east in the Kettle Moraine area, like LaGrange, WI. Think cheese and dairy.
That looks like a teeeeeny town. Last year, we spent a few nights in LaCrosse, not too far away from there, and right on the river. Cute town with enough bars/restaurants/cafes to keep it interesting. I liked it there. We'll probably add it to the weekend trip rotation.
