+1 on the Pacenti Brevet rims. I believe these are tubeless compatible as well and with a more modern wider internal width so you can run 28 or 32 mm tires and get a sublime ride using latex tubes and lightweight open tubulars or just go full tubeless by running 2 layers of tubeless tape, some tubeless tires of your choice & sealant.
