Aside from whether they would switch the crank, you want to know that definitely the shop didn't do an aftermarket switchout and therefore potentially void manufacturer warranty. If you purchase the bike, there may be value in getting the full specs of bike you purchased as part of the receipt, if the Praxis crank isn't part of Trek's database as being the stock build.
