60 cm might be the max size frame they make that in. And probably it'll be fine for you. My inseam is a little more the 34.5" and I ride a 56 cm Tarmac and have plenty of room between knees and bars. Might could have gotten a 54 cm.
At most with your long torso, you might just need to change the stem length. But that depends partly on how low or upright you want to be.
Maybe the shop has a 60 cm frame in a similar model they can let your ride to address you doubts.
