If you use the inner ring position, the chainline should be pretty good. And 170mm is just fine.

As for pedal threads, they were available in French and standard threading, I believe. You can read more about it here Bicycle Pedals -- types, installation, Maintenance.

Are the derailleurs and shifters Simplex? If the shifters happen to be of the Retrofriction variety I, and many other vintage enthusiasts, would gladly take those off your hands.
