I really like Velocity Dyads or Mavic A319 rims with what ever hub works for you. Here is my wife's Raleigh Mixte with 105 11speed hubs and Dyads

Here is my Centurion Pro-tour Also with dyads

And my Fuji Stratos with A319 Mavic rims with Deore hubs
