I've done plenty of riding upstate. It just isn't something I can do on a daily basis or on the spur of the moment. I need to get into better shape too since it is hillier. There is also a new loop you can do from the GWB up through NJ back into NYS and across the new Cuomo/Tappan Zee bridge and down on the rail trail. That ride is 50 miles but since it is 18 miles to the bridge from my house it would be a long day. Or I could drive or take the subway.
