Chipotle is good. As you might expect we are surrounded by very good Mexican food. Probably 30% of our meals are some variant of Mexican utilizing grilled chicken or fish. There are a lot of healthier options - not all of it is cheese enchiladas and refried beans although the unhealthy options are very tasty. The killer is the pre-meal basket of chips. Usually have to tell the waiter no gracias on those.
Mexican is probably the only cuisine that I could be totally happy with eating only that for the rest of my life. I currently have a slow-cooker working its magic on a batch of chile verde for dinner tonight. You can have the waiter bring that extra basket of chips over to my table.
