Protein snacks might fill your belly and taste good, but they won't help performance other than by the sodium they contain. Back in the day, I knew guys who took eggs and even raw ground beef with them on long rides. Fast guys too.

I eat stuff like that for sailing because it's all day in short bursts of intense activity with a lot of sitting, but I'd probably feel better afterward if I ate more carbs.
