If Mexican style menudo is done right it's really good, despite it being tripe. I've had excellent Filipino menudo, too. It's more like a stew than a soup, and they use pork liver among other things.

I often get pho with tripe but don't care for menudo so much.
Speaking of fried nosebleed...
Once at a pho joint in Vancouver the little lady went all out and got the
Bún bò Huế, which includes cubes of congealed pork blood. I ate one of those cubes and I think that'll do for the rest of my entire life.
