Lovely example. Should clean up nicely. I've become a firm fan of Panaracer Pasela 28's. The perfect sport tourer tire. And I know you want as original as possible, but you may want to consider a Suntour 70's derailleur/shifter setup. A Vx/power shifter swap does a GS good. (And turn that seat clamp around.)
