You've got the Old Colony RT which connects to the infamous CCRT. Not on TrailForks, but the Nauset Trail is a street ride away off the CCRT and brings you right to Cost Guard Beach - one of my most favorite 'detours' from CCRT. Nickerson Park isn't too far.
Further north there's Old Kings Highway/Head Of The Meadow and, of course, the fanstastic, out-of-this world scenery of the Provincelands trails.
If you get to the end of CCRT, biking on Ocean View Drive feels like you are on the West Coast - not much traffic here and a quick out-and-back though not flat (unfortunately, doesn't look like there's a way to make it a loop as there's no shoulder or sidewalk on 6 at that point)
My personal opinion is that for street riding the Cape is fantastic during the quiet hours, but otherwise there aren't that many roads so they can get busy near populated centers, especially if you're on a double-numbered road.

P.S. Sir Cricket's in Orleans is a favorite place for fried seafood.
