Some people have already mentioned the Sony RX100, I have an older model from this series and I really like it. I got it because I wanted a P&S with RAW format and it has not disappoint. I still have some issues getting used to the interface (I'm more used to Canon) but it takes some great pictures and can be operated one handed. It fits perfectly on my top tube bag so it's easy to reach while riding. My only gripe is that my model is very old and does not include a viewfinder and sometimes it's hard to see the screen in bright sunlight, but I understand newer versions added it.
