Judging the wear om internal gear hub part
I took a Sachs Torpedo 3 speed hub apart, and cleaned all the parts.
Now I'm looking at the wear, before I slap it all back together with some fresh grease and oil.
But what do I need to look at? How do I determine the state of that pile of part I have in front of me?

Look for pits in the bearing cones, and chips on the sun and planet gears. Sourcing replacements might be a problem.

He doesn't mention your specific hub, but maybe a little history for your ages old hub from a very old article...

I'd just slap it back together too. If it works it works, if it doesn't it doesn't. If you can figure out why it doesn't work then you'll know what to replace.
Don't let pits that aren't in the actual thin path of the race that the bearings touch make you think they aren't good enough for something you can't get new parts for anymore. I only worry about pits if they are within that shiny narrow line the bearings make on the races.

Yes, put it together, build it into a wheel, pop it on a bike and try it out. Now you have seen and recorded all the internals, the next step is to feel how it works on the road.
I use a lot of IGH and coaster brakes, and I always try them, preferably before taking them apart, usually by riding the bike or putting the wheel into another bike.

By now I had the internal back together inside the hub and they seem to be working.
But testing in the vice is not the same as testing under load. I am a bit worried about the state of the axle and in particular the amount of play on the planetary cage.
But I am also interested to find out if it all still works. So I'm going to put everting back together. But I'll try to get a new Sram cone, because the improved design makes makes the cap over the little spring redundant.
And the cap is a p.i.t.a. when reassembling the hub.
