The Specialized Roubaix is the closest to what used to be referred to as triathalone geometry and meant to provide added stability and require less finese on the part of the rider after a long swim. For me the fork rake or offset is the critical dimension that determines how stable a bike is at speed. With the trend to more special purpose bikes one needs to be more careful and not go by what it is termed by the marketing folks. I also have found that a flat bar puts more of my weight on my hands and arms and is more fatiguing as a result as compared to my bikes with the drop bars. On the plus side the road bikes have much lower gearing than I have used over the years and this helps with older knees.
