Why do tubulars lose air?
I love my tubulars and I don't even mind pumping them up before each ride but it puzzles me as to why?

Most performance-oriented tubulars use latex inner tubes, resulting in fairly quick loss of pressure. (You can get latex inner tubes for clinchers as well, and this similarly results in faster pressure loss than if you use standard butyl tubes.)

Air is not very clever, but latex is easy to trick.

If the rubber were thick enough and made with stuff to make it harder for air to pass through it, then you'd be riding something about the size of your car tire. Do you really want that much weight on your bike?
All tires clinchers, tubeless and tubular let a little air pass through their thin material. Till technology gets a cheap enough fix for that, we have to put up with it if we want something comfortable enough to ride.

As has been stated, Latex tubes' structure (physical properties) are much more permeable than vulcanized/butyl tubes. They leak air at a higher rate. It's a trade-off. They deflated faster but provide better road feel, better cornering and handling than standard rubber tubes and clinchers.
FWIW, I run "Open Tubular" tires (Challenge Strada Biancas) with latex tubes. I find the ride almost the same as traditional tubular tires with the convenience of clinchers. And yes, they leak air fairly rapidly and need to be topped off before every ride.
