Getting the right reach on fitness bike
I currently owm a fitness bike for 2 years, but I always felt the stack and reach were a bit less, especially the reach.
how many mm can I extend the stem at maximum , where otherwise I should just get a different bike ?
ciurrent stem is 100 mm , 7 degree rise

There's no "maximum " stem length, but once you get beyond 120mm, you're might be on a too-small frame. But it all depends on all kinds of other measurements, and not everyone is built the same. Look at a bike fit calculator.

It depends on the exercise bike. Many spin bikes don’t have a lot of adjustment. Unless you buy a gym model. What brand is the bike?

120mm-130mm stems are not uncommon. If you think this will solve your fit problems, no reason (other than cost) not to give it a try.
On the stack, you can just try flipping your current stem to see if lower is better - or maybe I'm reading your post backwards and you think your current stack isn't high enough? If you want something higher, you can buy stems with more rise.

Sorry have not heard of a Fitness bike. They come up with crazy name for bikes now
Consider every bike a exercise bike. But mostly indoor bikes.

Trek uses the term to describe their FX line of roadish flatbar hybrids. They seem to have a very short reach.
