Maybe a naive comment since my experience with discs is limited to one bike, but...
Hydraulic brakes have been the most trouble free thing on the bike that I have them on. They have been on there long enough that all manner of other things on the bike have worn out or broken, but the hydraulics have been 100% trouble free. Pads wore out and needed to be replaced, but that is normal wear and tear regardless of actuation type.
That is with a budget end brake (Tektro Aurigo). I'd imagine better ($$$) brakes would be expected to do even better.
Maybe I have just been lucky though.
Personally if it was me I'd be willing to take the chance of just maybe at some point needing to limp along with one brake for a day or so in order to have the better feel of hydraulic brakes. Maybe if I was touring off grid in a third world country or something...
