It might be temporary... people are dredging old bikes out of their garages and either refurbishing, flipping, or both. I was lucky to find some 28-630 tires.

All things ISO-630 are available on eBay, although I hate to recommend that. Supply isn't a problem if you're willing to pay...

Wasn't there a thread recently in C&V from someone who came into a buyout of an old collection of 27" bike wheels, both low & high flange ? I think it's in the post tile, check the C&V listings and welcome to BF you Stranger Thing

You can't have looked all that well.
CR-18 rims in 27" are on the market. I think Alex offers sum as well. Tire selection is a bit limited but still pretty good.
