Fun film. In addition to Eddy, I recognized:
Herman van Springel. He lost the 1968 TdF by 38 seconds on the last stage time trial to Jan Jannsen, the closest TdF at the tie and only surpassed by by Greg Lemond's 8 second gap on Laurent Fignon in 1989. He also won Bordeaux-Paris a number of times.
Gianni Motta. He was a good rider but the Italians thought he was going to be the next campionissimo in the 1960s and were pretty unforgiving when he turned out to be merely a very good rider instead a new Coppi, Binda or Ghiradengo. He also did not have the killer instinct that the really great racers possess.
Roger Swerts (I think it was him). He was a faithful Merckx lieutenant for most of Eddy's career.
Marino Basso (I think it was him). One of the top sprinters of his era. He won a Rainbow jersey, a good number of grand stages and one pints jersey in the Giro.
There are also some truly epic example of late-1960s/early-1970s sideburns.
