Good out and back bike-packing in AZ or NM?
I want to do a one night out and back or loop in February in either NM or AZ. It could be either mountain (40 to 60 mi), gravel (100ish mi), or road (100ish mi). Any suggestions?

Stay south in each state. The higher elevations in either state brings much colder temps and chance for snow. As well there are so many dirt/gravel roads both places its impossible to recommend anything except general regions, like anywhere in the Nat'l Forest from Silver City, NM, or maybe Tucson, AZ. Same with road riding.

Superstition/4-peaks Wilderness east of Phoenix is great if you're looking to really get out there, and relatively easy access from a major hub airport. I'm a road bike guy rather than mountain bike so I've mostly hiked there, but there are so many trails and forest service roads you have a wide range to choose from.

Both of these are really good suggestions. I have a buddy in Silver City that has a B&B that I've been wanting to catchup with. Maybe that's the ticket.
