I'll hopefully be riding through in the summertime, but I'd be interested to know how tolerable winter touring is there. We're planning to do winter touring in Greece, Sicily, and Sardinia with hopes that the weather will be pleasant.

You gotta love the morons who burn bikes doncha?
Same type of young moron guys who break store windows and burn cop cars here in Montreal during a hockey "riot" even if the Montreal Canadians win.

If he wants to meet Dutchmen, he should come to Belgium, they're crossing the border by the 100.000's. Apparently, the Dutch government has issued a reward for the person that succeeds in transporting the biggest viral load out of the country. The ones I run into do a lot of sneezing.

In the summer along the coast, but if (still) planning a winter ride I'd suggest inland heading first to Arnhem then NE with Groningen as final destination. You'd mostly have the wind at your back, and there are many charming off the beaten track villages to visit, some, like Blokzijl are 16th cent. sea ports that found themselves landlocked following the sea reclamation. From there it's a swift and fairly cheap train ride to Amst to round out the trip with the city lights.

Best of luck
