Specialized Allez Sport, New tires

The time has come to replace the tires of my Specialized Allez Sport. The width of its tires is 26 and the problem is that there aren't many options at that width where I live. What would be the difference between that and a more popular 25 wide tire? In terms of feel, would that make a big difference? 28 seems to fit marginally. Could you please help me choose what width?

25s will be fine if you don't have clearance for 28s. 3-4mm clearance is enough. Chainstays and fork crown are the usual tight spots.

At fork crown, front and rear, there is just to little space to go for 28. Are 25s going to feel too different than 26s in terms of comfort?

Think about it. The difference in theory between 25 mm and 26 mm is 1 mm.
You won't notice it

If you take the opportunity to upgrade to a better tire, your ride quality will improve.

There is usually a 1-2mm difference between labeled width and actual width with different models and manufacturers of tires and rim width can make a little bit of a difference as well. Most will be offering a 25mm width and not a 26mm but effectively the same thing.

This is what I have in mind. Currently I have the RoadSport tires. No complain about it and they have proved to be quite resistant to punctures, but now that I have to replace them I would like to get something better, at least with better rolling resistance like the Grand Prix 5000 that come in 25 and 28.

And if you can't decide there's always the 25.5 mm tyre.

The difference between brands of tires with the same marking is greater than 1 mm. Some tires run wider and some run narrower. The difference between brands will be greater than the 1 mm you are worried about.

I expect that "26mm" description is more a marketing term than a real size difference from the common 25mm tires. Perhaps it's done to make the buyer (that's you) think they are truly different and you have to buy this specific tire. As noted, bike tire sizes are a bit arbitrary and different make "25mm" tires will measure different actual width when installed and, of course, they will measure different widths depending on the rim they are installed on.
