Same here. I'm sporadic. I average about 50 miles a week, but how I achieve that total varies a lot.

I join a group ride almost every Wednesday evening, 22 miles at a vigorous pace, on flat terrain. This is my most consistent biking habit.

Sometimes once a week and sometimes two or three times I fit in a casual ride, anywhere from 10 to 30 miles, occasionally more.

About twice a month I do an aggressive 45 minute interval routine (rolling hills for 14 miles on fixed gear). I wish I could make this a weekly habit, but it's hard to fit in around family and other responsibilities.

My wife and I used to ride to breakfast almost every Saturday morning, typically 20-25 mile round trip, but she had surgery recently and has not been able to ride. She's nearly healed now, so maybe we'll start this again.

Honestly, the biggest obstacle to my getting into a habit of 4 or 5 good rides every week is my morning aversion. There are so many demands on my time almost every evening, I can't consistently fit in biking more than about twice a week. There's always a little time before work early in the morning, but I hate getting up. It has been a hard thing for me through my whole life. I hear people say they are "morning people" and I don't even know what that means. I guess another option would be to go late at night, after other responsibilities have gone quiet. But I don't really like riding after dark either.

I don't STRAVA and I don't carry a phone or other mileage measuring device. I have checked the mileage some of my favorite routes. Had 3 rides today. 2 were about 5 miles each and one was around 12 miles. I will do longer rides in cooler weather of 20-40 miles. Mostly I just try to ride some amount every day. Last year I only missed 5 days out of the year. I crashed early this year and took nearly 2 months to recover enough to ride more than a mile or two at a time. I don't compete with anyone. I just try to have some fun.

150 miles on the weekends, 100-130 of that on Saturday . Three 25 mile rides during the work week.

I'll ride to work once a week, which is 24 miles round trip, mostly flat with the first 2 and last 2 miles down and up, respectively, a 350 foot hill. I then try to get in at least one more ride, which winds up being anywhere from 12 to 30 miles of all hills. Sometimes I'll do that ride once more during the week, so anywhere from 35-60 miles. Rest of the days, I'm running. When my IT Band acts up and I need to take a break from running for a few weeks, that's when I'll pack in the mileage. All that running time turns into cycle time.

Looks like about 150 a week. Usually a couple of shorties - 15, 20. Then a couple of 30-40 and a 50 or 60 miler but I am old and decrepit. Usually take a day off.

To answer this I did a quick scan on strava of my ride log over the last few months. Here's what I see.

Rides per week range from 1 to 7, I'd guess averaging 3.5. Note I don't record utility rides, which are probably another 3-5 rides accumulating less than 15 miles.
Most weeks I ride less than 100 miles, some a lot more
One week out of four I'll have one very long ride, from 120 miles to 360 miles (the latter being over 2 days). This coming week I'll do a 1200k, so stupid big numbers.

Pre-covid, I commuted weekdays, which added about 50 miles/week.

I don't think this is a particularly healthy pattern, nor one that maximizes fitness achieved over time invested. It's just what I like to do.

At least 100 miles a week split across 4-6 rides. I try to make 10 of those miles good hill climb miles.

I try to get in 2-3 rides at 3-4 miles per ride a week, with a longer 6+ mile ride on the weekend. These past 2 weeks, haven't been out, due to weather or family schedule(school starting up). I'm really looking forward to this weekend if the weather stays nice.

BTW I'm not a road warrior, just a MTB'r, that's why my distances are shorter. My local trails are a lot of up and downs. Every once in awhile I'll go for a long rail to trail ride(10+ miles) if my daughter wants to go for a ride.

When I rode for 25 mins. it seemed like forever. My fitness was ok, but I think I was randomly riding a small loop around the neighborhood had me wanting to go home at every turn.
To reach an hour, I'll need to find a longer single loop that will not give me the option of bailing out. Kind of like running laps. How do you deal with the sheer boredom of cycling long times like an hour ?

Generally measured in time, not distance. Generally between 12-15 hours a week, which translates to weeks generally between 300-400km. Some weeks get stupidly big, though...

I ride daily. Weekdays are commutes (to work) and interval workouts (from work). Saturday and Sunday are long rides. At least one metric century (3.5 hours solo), sometimes two. Some weekends are an imperial century (5.5 hours) (at least once a month).

That's my main issue. It's been a very hot week and sometimes when my alarm goes off at 5 AM I'm still too tired to climb out of bed and go ride. So I sleep for another hour and skip the ride that day. But in the evening it's usually too hot to ride, plus my wife and kids like for me to be around for family time in the evenings. If I didn't have this pesky job to go to every day I could get some awesome mileage in, but then if I didn't have the job I'd probably have to sell my bike.

I am an AM person, but it almost seems like everything else works against supporting it. Relatives, some friends, lawn services, & construction seems to happen after 5pm & lasts until 10pm. That time of activity will mess with any "morning" person.

I try making sure that there are interesting things/views along the route. We have a lot of water views in Seattle and I try doing rides that have those views. Or nice rolling farm land. Even years ago, my commute, 17 miles each way, had about 5 miles of lake shore and an arboretum along the route.

If you are constrained to urban or boring areas, I could see that being a problem.

I prefer mornings as there are fewer people on the roads, particularly fewer brainless tourists (live near a popular coastal area), so less risk from being hit or run off the road. It's also cooler, though sometimes too much so when the fog is especially thick and you can't see squat. Bike paths are also much more empty before 10am. If I'm taking the mountain bike, hitting the trails at 8am makes for a relatively deserted mountain, very nice not to have consistent two way traffic on the singletrack.

Monday is typically rest day, and then whatever gets me to 250mi for the week. Weekends are for miles, group or solo.

I'm currently finishing training for 6 Gap in NE Georgia, so this is my current cycling week:
Monday: 1 hour hard pre-work trainer ride workout
Tuesday: 90 minute pre-work trainer workout ride
Wednesday: 1 hour pre-work EZ ride outside
Thursday: 60- 90 minute killer pre-work indoor trainer ride
Friday: Rest
Saturday: Endurance ride of anywhere between 3.5 - 5 hrs of hills repeats and some flats mixed in
Sunday: 1 hour recovery ride EZ

Not training for 6 Gap:
Monday: 55 minute commute to and then from work (about 11 miles each way on my heavy touring bike)
Tuesday: 60- 90 minute indoor pre-work trainer ride
Wednesday: 55 minute commute to and from work
Thursday: about 20 miles of mostly hill repeats
Friday: Rest
Saturday: Endurance ride either with group, solo or combination: 40-80 miles
Sunday: rest
