Hydraulic brake for mountain bike type of disc brake

I was hoping to use a foot brake pedal (like a car brake pedal) for my newly built low speed electric car. The wheels will be attached with hydraulic mountain bike type of calliper with a 160mm disc brake rotor. I was wonder how can I connect the calliper to the foot pedal since the calliper usually is attached to a hand brake lever rather than foot pedal brakes. Should I also buy a separate master cylinder for this configuration?

You are heading into hazardous territory. You cannot just mix and match braking components, you will need to understand the relationship between pedal force and braking force, which will depend upon the relationships between the diameters of the master cylinder piston and the slave pistons in the brake caliper.
I do not know how you are steering your car but you might look into using a yoke-type steering arrangement and mount the correct hand-operated bike brake lever(s) on that.
Depending upon the weight of your car bike brakes might be inadequate.
