I'll put in a good word for Fabric saddles. Their range is confusing until you figure out the code: apart from a couple of one-offs, they have one saddle with a perineal relief channel (the Line, also available as a short-nose Line-S) and one without (the Scoop). They come shaped for three riding positions: Flat (on the hooks), Shallow (on the hoods) and Radius (flat bars). And they're available in three widths and different rail materials.
