Some of it might be down to just the terrain, or advocacy/builders in your area. North shore is different from Whistler, UCSC is different from Downieville. Phoenix is a large flat area of millions of years of sediment poked through by volcanic peaks... in town, all the mountain biking is on the peaks, out of town there are no trails on the peaks you could ride on. it's all on the level. On a recent Berm Peak episode, Seth explained the new park he championed in NC is mostly flow and not technical because everything else in the area was the opposite.

The mountain bike was preeminently built to be used on trails and in off-road cycling activities. It will help you feel more comfortable, and save more energy when traveling on these terrains. But today, people still use mountain bikes to go on the road. This is becoming more and more common.

This weekend we are staying at Casini Ranch Campground in Duncans Mills, California.I scoped out a nearby ride that looked like a really short loop that I could do in about an hour and set off. Road up, single track down. I kind of failed to appreciate that it rose more than 1000 feet in about one and a quarter miles. I had to scrub pretty low in the climb because I just ran out of time. I never left the dirt road but I was happy not to be on a gravel bike for that little bit back down.
I'd post the Strava but 1) analyses are all messed up because the GPS was in my pocket and people get hung up about that and 2) it’s pathetic. Suffice to say I got about 250 feet up the climb

My 1983 Ritchey Annapurna was the nicest mountain bike you could get in that year. Now I'm riding a modern enduro FS bike. My Ritchey is my town bike.
