1987 Specialized StreetStomper
Picked this up the other day. I know it was a mid-to-low level bike, but I love the looks. The paint is9/10.
Has newer tires, but everything else appears to be 100% original. It's 3x6, not light (heavy wheels) but rides very well after some adjustment.
I think they only made these 87-89. Any collectible value?

Nice bike. Our family continues to use three mid 1980's Specialized that I purchased for them as children. The grand children are now enjoying. As to value, son said his FIL got one at a yard sale for $20.

Not collectible but a decent bike. There is one for sale locally that has been listed at $200 for a very long time. It's not going anywhere.

It's not so much the value, I just get excited to find 30+ year old bikes that are in this kind of condition. I did remove a lil rust from chrome parts and gave it a wash, lube and adjustment.

It's in great shape. I have a hard time turning down top end vintage MTBs in great shape when they pop up locally. Of course I could just stop looking . . .

That seems a bit optimistic, at least local on CL. I mean, a 35 year old bike in pristine condition is priceless in my eyes, but the market seems to disagree . Here in CA, the resale prices have really cooled down in the past year. I see bikes sitting for $100 that would have been snapped up in 2020-21. I assume it's the same elsewhere?

Vintage Trek Hybrid type bikes are selling for $250 - 300.
Local REI Mechanic was happy to find an early 90's Rockhopper for $250 clean. And he is in his 50's, not some kid.
The difference is the west versus the east. Urban environments are just not anywhere near as open in the east.
And then you have no cold weather (At least what most people would think is cold) so there are just a flood of bikes in that market vs the east.
I bought this for a flip but it road so nice, and I liked the way it looked I decided to keep it. (I was going to throw it on CL for $120 and keep top posting like I always do) I hadn't seen a quality hybrid in steel in forever on the fly.

Parts of the midwest have terrific MUP/bike trails. Part of losing the manufacturing base in the rust belt. But they have winter of course.
I have no problems finding nice steel vintage bikes for ~ $100. Picked up this late 1980s Stumpy for $100. It sat on FB marketplace for several weeks.

That's pretty sweet. I've mentioned this Trek 970 out here before. Guy started at 200 and now at 170. The add-on shock probably isn't helping, but still it looks damn nice, right?

And here's one I listed...zero action over the weekend

Your Streetjumper I'd say is a $100-$150 bike. The components are nothing special, but there is a bottom for a properly tuned, clean and ready to ride bike.
Edit:

That's because you are driving for them..... I am not driving more than a mile. I bike to the spots I find junk in. Like a 9 minute bike ride. And I am in the Balto DC metro. You are not paying $100 for that bike here.......$200-300. Maybe more. And I wouldn't pay more than $40 for that bike. I paid half that for that Innova.....did need tubes tires, and new pads.
I would not expect it to be available for $100 in hot markets. It really depends on your location.

Flipped this Street Stomper a couple of months ago. Sold for $325, even after I poached the Selle Italia Saddle.

This nice 1990 Trek 950 on the other hand isn't getting much action. It's very nice except for the seat. All main components are original and in excellent shape.

I sold it in one day for the $150 asking price. Had a couple of people interested. It fit, but I had to thin the herd. 6-speed, a bit heavy and it's hilly where I live.

As you illustrated, the Streetstomper is set up well to cruise for some tacos or visit the beach. An older flat bar mountain bike is less of a cruiser and may not have as big a market, unless a collectable model.
