What gloves would everybody suggest for those living in the UK?

You can get a liquid, such as AnyGlove, that gives the touchscreen capability to principally any glove. It works at the so-so level after you cover a sufficiently large area on the glove finger.

Here’s another idea. Maybe you could modify the glove. Cut finger off an old, unused glove. Cut off the tip of the good glove, and sew the finger from the old glove with just a couple of stitches so that you can easily pull it off to expose your fingertip, and then pull it back over. Something like this…

Siri, send a post to BikeForums Winter Cycling Forum. "Ok, what do you want me to say?" Siri, say that voice controls work much better than destroying perfectly good gloves with scissors ...

Use a fingerless glove that converts into a mitten via a mitten-flap. Pull the mitten-flap off just for when you need to use the touchscreen, put it back on when you're done. That's what I use and is the perfect cold-weather layering system for me.
