I can maybe see adding "maple," however that is done, because it's a related flavour. But making it spicy? That changes the whole thing. It's like adding a motor to a bike.

God, I love pancakes and it must be 15 yrs or more since I have allowed myself that pleasure. A little of the right hot sauce wouldn’t destroy them, particularly if there were some pork product nearby, but the only acceptable topping is maple syrup.

I made some pancakes just this morning. Technique was a little off today but blame that on rust, I only make them once a month at best.

I cook up all the batter and refrigerate the extras as a future snack, they warm up easily in the microwave.
