How about a (barely) vintage tandem? '80s Burly Samba
My wife and I had been looking for a cheap quality tandem and this is what we bought a couple years ago. It was originally set up for road riding with 1.5 tires, drops and aero bars. As flexy as it is without any triangulation, I thought it better to build it with a more upright stance. It's been parked for a couple years, so I put some fresh rubber under it. The trouble with having a tandem is finding a willing stoker. I managed to get my wife out this morning, hopefully she'll be up for it again.

Very nice! Is the flex very noticeable to you? I have an old Santana Vision that I’ve thought about replacing with a Burley or Co-Motion after the rear hub collapsed and I hunted an affordable replacement for a couple of years (140mm Hubs are tough to come by!)
