I just noticed there's a dearth of proper (road) cycling videos for Knoxville. If I had video equipment, I could make some.

Given your description of the attitudes of local large pickup drivers towards cyclists, you might not get many takers.

I think I made two food stops on the last organized century I did. One of the stops there in Vancouver had chili, so I had to hit that one.

I did an organized century once which had lots of stops and food at the end. The next day we were having coffee on a short ride and I announced "I ate 8 times yesterday". I got some high fives for that.

I was shocked to see people walking the hill or sitting on the side of the road.
