10 year old perfect tires? Should I replace?

I just bought a barely ridden Fuji road bike that has vittoria zaffiro tires 700 x 23c
The edge tread perfect like new, the side walls are clean and fine, the center is perfect …….but these are 11 years old should I replace or keep them?
When I changed one of the tubes the edge of the bead was slightly crumbling but minimally and that was only due to fitting the tool in to remove the tire

I don't think its absolutely necessary but I think I would. Especially if the sidewalls are cracking or the bead is crumbling. When I did, I'd go to a 25 if the bike will accommodate it.

If they are not cracking or crumbling you wouldn't need to replace but ideally you want to cram the widest tires you can on the bike. Skinny tires like that aren't very comfortable or fast.

I wouldn't trust them for safety reasons.

You live in the Mojave desert (as I do). I wouldn't trust 10 year old tires, especially ones that are run at high pressure, to not fail without warning. You are probably going to have to run them at 100 psi to avoid pinch flats with a 700C X 23 tire. Even stored inside a garage they are subjected to pretty high temperatures. It is 108F in the shade right now and maybe hotter in my garage with the sun shining on the south-facing uninsulated garage door. In any case buy a spare set of tires because these are probably not going to last long if already 10 years old.

I live out here too, but I'm lazy and cheap. I have spares but I run tires until they give.

I rode my ~30 year old Specialized Turbo R tires around a fair amount, until I decided to try 28mm tires. That included a flat repair with no problem. If they look fine, 11 years old wouldn't faze me at all.

Tyres degrade with age (they lose their suppleness and grip) and 10 years is about the useable limit depending on storage conditions, exposure to UV etc.
Personally I would replace them at this point. Tyres are the most important part of your bike, not something worth skimping on.

Another reason to replace them is that tyres have improved a lot compared to a decade ago. Depending on your frame clearance you will want at least 25c modern tyres.

I'd take the experimental approach. Take a series of rides, maybe 1, 5, 10, and 20 miles, come back home and inspect the tires carefully. You'll likely wear off the hardened rubber on the tread within a couple of rides. Then balance the remaining tread with other observations -- things like separation of tread and case (replace immediately!), or dried, cracked sidewalls (does it go down to the threads?) or the tire bead cracking (get down on the ground in a shady spot and give thanks if you didn't have a blowout). If everything else is OK, keep riding!

I rode tires likely 40 years old, went 1,930 miles. It got a nail the ride I decided would be it's last. It wobbled the 30 miles home. LOL.
They were 590 x 30 tires, so I could use them at 55 lbs.
Not possible with silly narrow race tires.

See that you are replacing. While waiting I'd ride them if on a leisurely ride. Would not go bombing down a long steep downhill!!

So I just came back to my local bike store …..a Giant dealer and purchased Continental ultra sport three tires in 25c….. I really want to keep local bike stores in business especially this dealer who is pretty new and purchased these for $33 each ……what is kind of annoying is that I went onto Amazon and Planet Cyclery sells them for 22… shipped. Well I just did my good deed and keeping this business alive but maybe next time I need to shop online instead.

Seeing as you just bought yourself some bike tyres, I am guessing you decided to replace them. That would have been my vote too

$11 difference is almost 50% difference at this price point, either the online tires are not the same tires or the same quality or your LBS been a bit unfair maybe? I don't know, there shouldn't be such a large price difference

Brick and mortar stores have overhead online retailers don't have. It suck with the inflation today, but these people are struggling just like you and me (well, I don't know about you, but certainly me). I will do everything I can to NOT shop Amazon. I have a laundry list of reasons why. Unfortunately, there are times when there is little alternative.

Yes, we are all struggling a bit more ot less and to some extent these days, my last purchase from my LBS was same price as online price, a framebag for my salsa cutthroat, I wont pay 50% more just to support my LBS, I am sorry and Thank You.

Tires and tubes are changed out…. I did my good deed and paid 45% more at my LBS but not agin ….. because after looking online there are many brick and mortar stores sell there at reasonable prices.
