I'm a good 2.5 hours from Raleigh so I don't really bike there much but I'm sure you can find a shop ride out there for road. As far as trails go, you shouldn't have any trouble finding some good trails either. I would find a shop near where your going and give them a call. I'm sure they can give you some good advice.

Bring the XC rig along. The road cycling around here isn't the best, at least not as good as in Madison, WI (where I am originally from). There is lots of MTB'ing around. I live in Chapel Hill, go to Triangle Off Road Cyclists site. (TORC).
Where I live is near about 20+ miles of single track. There are other places to go as well, how far do you want to go? All of it is do-able on a XC bike with 80-100 mm travel. Nothing too gnarly. Trails are tight but very flowy, lots of log jumps, crossings, and technical enough to satisfy most people.

Bring the XC rig. Try out Crabtree, Beaver Dam and Legend Park anytime you feel like it. New Light is open Sundays and is definitely the most challenging but most fun trail around here.
