Addiction 2021.1

Notices
Road Cycling “It is by riding a bicycle that you learn the contours of a country best, since you have to sweat up the hills and coast down them. Thus you remember them as they actually are, while in a motor car only a high hill impresses you, and you have no such accurate remembrance of country you have driven through as you gain by riding a bicycle.” -- Ernest Hemingway

I like liver sausage and paté, but not whole livers, chicken or beef.

My favorite gizzards are pickled turkey gizzards, mmm good.

KFCs that have the buffet will often have a tray of deep fried chicken gizzards out for your enjoyment.

There are a few Chicken Express stores around us, but I've never been to one. About the only fried chicken I'll eat these days is Babe's (there's one in Roanoke not too far from Denton) and Chick-Fil-A. But those days are far and few between. I do have to say though that I love fried chicken and a good chicken fried steak. It's just not very good for me.

My only chicken liver experience has been at Sammy's Roumanian Steakhouse in Manhattan. Chopped chicken liver, radish, fried onion, fried chicken skin and generously drizzled with schmaltz (liquid chicken fat) from a syrup bottle. It sounds like concoction that I would hate, but I really liked it.

Found this video - gods, I miss this place!

I grew up on chicken livers, sautéed with onions or chopped or served on various canapés and used to love me a chopped liver and corned beef or turkey sandwich on rye with coleslaw and nice garlic pickle. Deli chopped liver was mainly beef, I was told. Doubt I could get that stuff down today.

It's definitely not healthy.

Their particular marinade is salt, MSG, and garlic powder.

Fried in beef fat.

Not only is the taste not great to me, I hated the texture.

These days, we tell people who ask us if there's any food we don't like, "No insects or recognizable organs."

It's also possible (highly likely) that the jovial environment, along with a bottle of vodka locked in a block of ice (), influenced my opinion. Here's a pic of the Mrs with a bottle of the golden glow (schmaltz) -

Could be either, but I assume that it's usually self-moderation.

Jerked meat is effective pickled, isn't it? ...and then there's ceviche.

How about pickled herring? (barf).

Chains: waxed.

What next?

Now that we've been having the occasional bib weather, maybe it's time to finally shave the leg pelts and get rid of that icky wind-blown feeling.

Pickled sausage, pickled ham hocks, pickled pig's feet... all good stuff.

Well actually, sausages in plastic I've had at the convenience market are pretty bad, but the ones in the big jar are usually good.

Jerked meat? I don't think that qualified, does it? I guess I'd have to look it up, but... lazy and not that curious.

Ceviche, I've had once. Meh.

Oh, pickled herring... Yeah, I've had that at my wife's family gatherings. Rather than say that I'd forgotten about that, it might be more accurate to say that I'd buried those memories deep, in the hopes of only recalling them so that I might decline in the event that it was offered to me again

I've always wanted to love pickled herring but nope, I just don't like it. Herring from a can is typically delicious though.

Ceviche done by the right chef is wonderful. The best I ever had was by a guy I worked with who was an avid fisherman. Had his own ocean going boat, etc. At his place he made a giant bowl of Ceviche with crab meat and I almost made a gluttonous spectacle of myself.

I'd had it several times and thought meh, and had avoided it for ten years or so before someone ordered conch ceviche for the table while we were on Key West. It was pretty much the best thing ever.
