I know Campy says 26 tooth cog, but I’m using a 28 now no problem. Could I push it to 30 or 32 without a Wolftooth road link? With it?

I don't go beyond 30 as the largest cog with a long-cage Veloce (for triple) rear derailleur.

A wolftooth might help but don't expect a simple or perfect result.

Install a triple crankset with a wide range Campagnolo cassette and set your chain length carefully.
