Can't chime in on the 1x vs 2x discussion except to say that the Diverge 2x is 48/32. I've a Diverge 2x and I like that I can stay in my big chainring longer without shifting . 1x sounds interesting but don't know the specifics.
As for tires, mine came with 38's and that was max for my 3 year old version , newer ones might allow bigger. I bought some 32's to put on during the summer when I'm mostly road riding. After 3 years, I never replace my 38's. I'm 67 with some neck issues and 38's with future shock are just so comfortable for me, it is easy riding. Don't think the 32's were any faster and were not as comfortable. So, I'd suggest holding off on the second wheelset until you've ridden it for a year or so . I have a roadbike that I'll ride for a month or so here and there, but I keep coming back to the Diverge. I'm sure there are other gravel bikes that are just as good or better but I'm happy with the one I have.
