That would be Stronglight 93 and 105. Ofmega Mistral is very nice too, if a bit aggresive in shape. Some 3-arm cranksets from Stronglight, TA or SR look pretty cool too. Then again, I'm biased towards C&V bikes and components.

I built up a Puch Mistral NOS frame and fork with Ultegra 11sp. Really lush ride. 9.4 kg. My lightest bike to date. (Weight weenies might scoff at it, but ye know, steel is real and all that ).
Frame is likely 35+ yo and was never built up. Was a delight to build it up.

2012 BMC SLR01 Team

I used this bike to break the 300-mile record across the state of Wisconsin back in 2012 at age 54. It's been used for many double-centuries and 100-mile road races. I'm 64 now, and it's still fast and comfortable for long days in the saddle.

The raleigh will a pair of mavic cxp30 wheels laced to 8 speed chorus hubs, record 2nd generation front,derailleur, downtube shifters for 8 speeds,8 speed record cassette, slime tubes and continental grand prix 4 seasons.
The peugeot will be upgraded with Shimano Dura Ace sl 7900 -10 speeds downtube shifters, Dura Ace RD 7800 10 speed cassette, Dura Ace FD 7700 deraileur, Dura Ace CN 7801 chain, slime tubes and continental grand prix 4 seasons.
5 out of 6 of my other road bike projects will have Shimano Dura Ace ST 7801 Brifters.

I think he's able to achieve that lower weight because of the rim brakes. Rotors and calipers make for better braking, but add a good amount of weight.

I ride Conti GP 5000 as well. I just snagged a pair of 30mm from Planet Cyclery for $40 each, but they must have sold out. 30mm wide is the max width my Canyon Ultimate can accommodate (on paper).

Litespeed M1 with all different kinds of upgrades since purchased in 2013 and a Viner track bike that I built over the winter 3 years ago. It has a mix of components but mostly period correct.

Full 105 group set including cassette and gatorskins + butyl conti tubes, Some generic stem (80mm) + specialized short reach (36) drops (alloy), mks pedals, cages and power comp saddle. All new came out to approximately 2700 USD... awesome ride.

Nearly all components are SunTour Superbe/Pro. Handlebar is Kusuki Medallion and Seatpost is modified Shimano Pro until I find something more suitable.
