Replacement derailleur for Peugeot UE8
I think I want to upgrade the simplex derailleur on my Peugeot UE8 and having read through some articles about upgrading vintage derailleur a I’m a little confused about whether a modern one will work.
can somebody suggest a decent, reasonably priced rear derailleur which is compatible directly or with an adapter claw.

The Peugeot UE8 did not come with very wide range gearing. Consequently, unless you're contemplating widening the gearing, about the only thing you may have to avoid are some of the narrow range racing derailleurs. The previous owner has already upgraded the shift system by eliminating the weak link Simplex Prestige shift levers, which were very flexible, resulting in high shifting effort. Personally, I'd go with a slant parallelogram, Shimano, indexing deralleur, despite the fact that you have friction shifting. They're widely available and give uniformly excellent shifting performance regardless of price range, with the differences being primarily weight, finish and to an extent, durability.

Another possibility is to upgrade to a SunTour VG series (you can get GT-long cage or Vg-t short cages). They shift extremely well for friction, and won't look out of place in many builds. They also have a tendency to have claws as much as they are without.
Also, SunTour Leprees might be doable.

Thanks so much for all those suggestions! So they’ll all fit the current frame without any issues? I was reading something about simplex dropouts not being compatible with many derailleurs. The way this fix up has gone so far I’m just assuming every single component on this bike has some idiosyncrasy that makes it a pain in the hole.
I’m not even sure if this frame has a simplex drop out…

I would go to the bike monger and see if there might be a stash of old parts and bits, then raid away!

Any of the Suntour Vx series are/were the go to upgrade from Simplex. In the early 70s I went to a first gen Shimano Crane which worked very well, but today the Suntour line should be available almost everywhere and at very reasonable pricing. And if you like shiny buy some polish at the same time!
Also, these later Simplex also work remarkably well... I bought this one new a few years back from Velo Orange and it was cheap! It works great but I did go back to Suntour anyway.

The pre-index SunTour derailleurs shift very well but they don't have the upper pivot B-spring of most index era derailleurs, which allows the jockey pulley to follow a more optimal path and provides better shifting performance.

Off topic, what sort of brakes did it use where there is a vertical hole for attaching the rear brake?

Took the old simplex off, with great difficulty I should add. Should I keep hold of the black claw the simplex was attached to or mount the new derailleur directly to the dropout?

If you want to keep the bike all French, The Simplex SX610 GT rear derailleur is a good option.
It has an offset top pivot design that helps it shift much better than earlier straight parallelogram derailleurs.
The 610 was used with great success by Peugeot on many of their mix level sport bikes in the 80's. Easy to find and not too expensive to buy, used or even close to NOS. The ones on Peugeots even had Peugeot brand plates on them, making them a nice match to their framesets.

Nicer Simplex derailleurs tend to be expensive, and IMO are inferior to the Japan made parts. You could be a modern Shimano derailleur on there, functionally it would be fine but to me would look pretty odd. The lower end Shimano and older Suntour stuff worked fine, often the higher end stuff was lighter and had a nicer finish.
Example of one of the new Shimano RDs with a claw, $13 US from Amazon. Ugly to me.

Those Simplex Prestige derailleurs aren't intended to be separated from their hangers; that's why it was so difficult. The Prestige hanger won't work with anything other than another Prestige derailleur. If you're replacing it with some other brand, they should come with their own hanger. SunTour's hangers are pretty common and work with pretty much any derailleur designed to mount on a Campagnolo-type dropout. Huret's hangers are proprietary, so if you want to use a Huret derailleur, make sure it comes with the hanger.
