There really should have been a bike called the "Felt Something" .
The Felt was a Z85 and the Giant was a Defy 1 (had to go back and look at some of my posts from back then).
I went back and checked my old posts from 2011. The Felt was $975 and the Giant was $999. They were both on sale (back when you could actually get bikes on sale...plus I lived in San Diego where bike shops are all over the place and sales were frequent).

My 2019 Defy Advanced Pro 2 (£2800 bike at full retail) came with only 105. But current 105 is hardly distinguishable from mechanical Ultegra. Diminishing returns on modern groupsets are enormous, especially now SRAM have a “105” level electronic set.

Not trying to be argumentative, but my original point is that I am surprised to see Tiagra on higher end bikes. Don't think I'd spend $1500 on a bike equipped with Tiagra.

I buy used so I can't fathom spending more than $1500 on a bike, period. LOL.
Not to be argumentative, but your original figure was $1000, and I think that 105 is a much more reasonable expectation at $1500 (right now, that might be a little low, but right now is inflated).
Also, keep in mind that 2021 Tiagra is a fair amount better than 2010 Tiagra. Shimano has kept pace on the upgrades such that a 2021 Tiagra is probably more comparable to a 2010 105 than a 2010 Tiagra while a today 105 is probably more comparable to a 2010 Ultegra.
By the way, besides the trick of buying last year's model, I suspect you were spot on about the number of LBS in San Diego providing you with the better deals. One of the things you may have missed in the last 5 years is the number of LBS that are now closed or bought out by Trek.

While I liked some of the rules as being funny, overall, I've not liked the Velominati one bit. When I see all the rules together, it looks like it started as a pretty good joke on themselves, then they forgot the joke part, and ended up with a list of obnoxious snobby crap that is either comedy too unfunny to be recognized as such or seriously pompous BS. It was written haphazardly by committee, and it shows.

If anything, 650B is on a downswing again since 2016. There are a lot more offerings in 700C bikes that can fit 38mm+ tires easily these days. That is, if you can get your hands on one...
