If I were building with those hubs for that bike, I'd use rim with a classic profile, like a Mavic Open Pro or an H Son Plus TB14 (if you want to go wider) with DT Swiss Competition spokes and brass nipples.

Nope. But if I was watching sports (solo), I have nothing to get ready. I'd just get whatever is needed during breaks in the action. (for baseball 3:55 of the 4:00 is downtime)
