And I no longer have a bike (not really bad news)
So I had the Trek Roscoe 6. Called Suntour and did the fork upgrade (had a gift certificate for Scheels and so it was actually free to go with their air fork) not a huge upgrade....but free so. I found out my local hiking store has bikes, they are just in the back. So I guess I have a LBS. Anyway, the GF was picking my bike up from Scheels and decided to take it for a test ride. I got home and she tells me I'm going to need to buy another bike since the Roscoe is now hers. While talking to the LBS, they said they have GT, Cannondale, Specialized, and Scott. Scheels has the Trek Roscoe 7 for 1849, I'm trying to come in under that. I'm looking hard at a GT Avalance Expert which my LBS has for 1375 dollas. 1x12 drive train, Rockshox Recon Silver. Honestly all I think I would need is better pedals and a dropper, but I know guys have a LOT more exp than me. So I'm open to opinions.

Haven't shopped for a bike in over a decade, but from what I have read on this site, seems you might be replacing part(s) of it the GT to obtain better shifting: SRAM SX Eagle shifting - fix or upgrade? - Bike Forums

The new Roscoe moved up market a step. It is a better frame than your old one. (The 6 is still the same-old.) They also updated the frame geometry so you might find it fits a little differently. The components are nothing special, but all present and good enough to go ride hard. No SX on the 23, it's got Deore.
The GT is pretty much the same as your old bike.

I thought the Roscoe was a plus size tire bike - Deore is a pleasant step up

It is, but I'm a VERY new rider coming off Bikesdirect full suspension stuff that was sub 500 dollars. I'm 43, don't bounce and am not going to be going too crazy. That said, I live on dirt roads with soft pack, near some trails with roots and rocks. Tried a full rigid and don't think that's quite what I want. I'm also 5'6. Probably a me thing, but 27.5s feel good to me where 29s always feel tall.

Every once in a while I see a successful bird hunter with a poodle. Pretty uncommon but as long as you don’t have to yell a silly name around other people it might work.

My LBS has suggested a Canondale Trail SE, GT Avalanche Expert or Scott Scale or Aspect. I'm leaning GT but I'm not familiar with any of these brands.

I have 0 complaints. Hunting, fishing, camping, hiking, kayaking, she's there. And she isn't tagging along. She does her own skinning and can debone and pack out her own animals. She isn't great with math so I do the reloading. But she helps cast bullets and we are always challenging each other with new recipes. Figured it's time we got something nicer than 400 dollar bikes and if she wants the Roscoe, I'll find something to keep up

There are really too many steps in bike quality, they slice the baloney pretty fine. The GT is pretty much like your old Roscoe.

Oh I'm ok with that then. The Roscoe wasn't bad only the GT comes with better forks. If they can both handle light trail duty I'm going to be good go for a long time. I'm not going from a guy who hasn't ridden in years to 4' drops, I will get along quite fine with something in the Roscoe 6 range. The big thing now is to get out and put on miles. Will be a great way to get back in the woods this hunting season as well.
