Rim recommendation?
I’m planning to build mid-motor bikes for myself and my other, and it occurs to me to ask about rim type/design. Recreational use, no gravel/off-road or cargo. Is there a best choice? Something to avoid? Planning to use 700x35 tires. Oh, not using rim brakes. Haven't built wheels since my youth (decades back) so advice is welcome — including “you’ve posted this in the wrong section.”

Probably more response in bicycle mechanics. Good spoke length calculator at ebikesca as well as many other places. I've had good success with Bontrager rims, but haven't built any wheels in years.

Lots of options. I prefer a stronger rear wheel for the ebike, 36 spokes, coupled to a rim with a reputation for being strong. Universal cycle sells wheels built with quality rims for not much. I'm running this wheel

Get something with a Velocity Cliff Hanger, velocity no BS rim or Alex rim.
