Took it out for a quick spin today. I replaced three of the rear gears as it was skipping under load. All good on the ride.

What size headset was this? Looking at the exact same bike on CL in my area but the fork is an old Manitou and appears to be busted. I'd like to put a rigid fork on it but I'm wondering how difficult/costly it'd be to pull off.

It's a 1in. threadless. Just look for a used one if you want to save. You should be able to find some out there.

Sure do and it's not going anywhere! This is how it stands right now with mostly black Deore LX components. Still have to come across some LX levers and shifters.

All depends on the condition of your bike. You could upload your picture to the member's album. Sounds like you have the Stumpjumper FS or M2 FS? Check this catalog:

As for rebuilding forks that old, good luck. Parts are scarce. Try searching for the fork rebuild kits.
