A lot of these bike have city bike saddles. Is this a consequence of the fact that with an higher handlebar you seat like in a city bike and so you need a wider saddle?

That has been my experience with raising my bars higher than the saddle. Saddles all got swapped for something wider after one ride.

With the higher bars you will have more weight on the seat, more padding will be nice.

Have you tried raising your stem? It looks like a quill stem, so it should be easy. If it's not enough, you can swap it for a riser stem like the one you showed. Make sure to check your local bike shops and co-ops first for something used.

As for handlebars, find something with some sweep, i.e. the ends point more back than straight out; they will be much more comfortable. Also, the riser stem and the swept bars will help compensate for the long top tube so you're not so stretched out. HTH.

Everyone is different.

As suggested, you can do a taller riser stem and/or a taller riser bar.

My own personal preference is for both, given the most-comfortable riding position for me is in a much more upright position. So, it's a stem with a steeper angle combined with a bar that has greater rise than a typical flat bar.

You'll need to confirm the stem you have, in terms of both the steerer diameter (looks like 1" to me, from here) and the clamp diameter for the bar.

But you could combine something like these two, in the appropriate sizing and color of course:

1. A tall quill-type stem with 225-250mm of length, allowing for up to 8" (or more) of height above the top of the head tube, such as the Nitto Dirt Drop MT-10:

Those can certainly give you more height to the hands and change how far you reach for the grips. How much you raise and alter the forward/rearward positioning of the hands can change the amount of load on your saddle versus your hands. Choose carefully.

The stem has a 22mm (or 7/8") diameter, its clamp accepts handlebars with 25,4 mm (1") diameter and is already at the maximum height.
My handlebar has a diameter of 25,4mm at the centre and 22mm at the extremities.
Probably I'll go for a new handlebar maybe a bmx one, but I do not know if a bmx handlebar is compatible with my stem and my brake levers.

BMX bar is 7/8 the whole way. So you’d need a BMX stem. Maybe there is a newer standard I’m not aware of- but I grew up with 7/8 bmx bars at the clamp and we have 2 kids bikes with 7/8 bmx bar clamp diameter.

^ I was going to use this bar for a build but when I was fitting my older daughter to a bike she asked for a higher bar- so I gave her the one I was going to use and ordered another.

I think Xwang can’t use that bar as I think his stem is non removable faceplate. And I PM him to swing by if he’s in the area and we’ll borrow parts from one of my kids bikes, but he’s not stateside.

Both are larger than my current handlebar (which measure 560mm and I think it makes the bike nimble when speed increases).

Bars are personal preference.
Bar on bottom has more sweep it seems, so that would bring the position back to you more. And it’s wider- as long as you have enough room for grips and controls before the bend a wider bar might be more versatile only because it’s easier to cut a bar than to add to the bar.
