Cyclocross and Gravelbiking (Recreational) This has to be the most physically intense sport ever invented. It's high speed bicycle racing on a short off road course or riding the off pavement rides on gravel like : "Unbound Gravel". We also have a dedicated Racing forum for the Cyclocross Hard Core Racers.

As others have written, a older rigid MTB checks all these boxes (except they have cantilever or linear pull/V brakes, not calipers, since calipers mainly don’t have clearance for wide tires). Even now, during bike shortage, you should be able to find such bikes on Craigslist etc.

They will typically have flat bars and 3x drivetrains, but you can switch to flat bars and 1x or 2x drivetrain pretty easily. If the bike comes with at least an 8-speed Shimano or SRAM cassette, you’ll also be able with to fit 9, 10 and even certain 11 speed cassettes.
