Well, if you stop riding or exercising you start to lose fitness, so yes you have to continue.
Now, if the original question means "if you had ideal fitness no matter what you did", then, even though I love biking, I would have to admit that yes I would ride less, I would hardly ever ride for 6 hours at a time, and yes, I would probably eat pizza, cookies, and Doritos breakfast, lunch, and dinner.

Riding helps keep my brain in shape. A person with absolute physical perfection still needs to work on the brain. Especially some of the ones I know.

I've always felt that if you want a great physique, then a diet and weight lifting program is a better way to achieve that than cycling. It's not like professional cyclists are known for having the most desirable physiques. Maybe they are known for being the thinnest guys in any given room, sure, but not the most desirable.

My body is where I want it to be - slim and proportioned. That's because I'm very careful about what and how much I eat, and I exercise a lot. And since I rIde primarily for the workout, of course I'd keep riding. Because you have to maintain your physique, or you'll age poorly.
Also, there's no good reason to behave in ways that you don't want. So...

Fitness is way down the list of reasons I ride right now, so yes, I would.
I haven't lost a pound since I started cycling anyhow, even if I am now far more toned and in better shape than when I started.

I do a lot of walking here at work. So, I don't look forward to getting on my KK2 trainer when I get home. I need to though, just to prep myself when the weather gets warmer

Perhaps a more difficult question would be if people would still ride bikes if there were no aerobic/cardiovascular/fitness benefits to cycling whatsoever.
Sadly I think my answer might be "no" or least not very much... I still might commute or Mountain bike for fun now and again, but im constantly short on time and need to squeeze in exercise at every possible chance.
Fortunately for me, the fitness benefits of cycling are not going anywhere, I don't think.

I think there's a clear dichotomy between those who ride simply (or mainly) because they like bicycling, and those who ride for other reasons.
Those who ride simply to ride, might prefer racing, touring, mtn biking, or just spending a day away from the normal routine. For us, everything else is a fringe, and many including myself started long before we considered or worried about our health (I started at 16yrs).
Others may ride as a form of transport, especially in urban areas, or because they need some form of exercise and this fits the bill. It doesn't mean they enjoy it any less, but their outlook will be different from those who celebrate the joys of the wind in their face.
So, count me among those who would still ride, even if it made no difference at all in my health, and I didn't need to as transport. OTOH - if it ever stops being fun, I'll take up kayaking or something.

If I could find my cycling body I'd be 5'10" and 175 lbs instead of 5'9" and 185 lbs, And I would still ride because it's the one physical activity that I can do that doesn't hurt my body and allows me to feel like an athlete again.

I lost weight before I started riding. I watched what I ate. Then I started riding to add exercise. My high cholesterol and blood pressure are all normal now. I haven't lost a pound because I ride. I had gone back to eating horrible and over the winters, gained it all back. Cholesterol and blood pressure still normal.
I don't ride fast and hard. I'm out on the roads enjoying God's creation. Last year I went on my first trip and immediately went on my 2nd trip. I am now riding because I enjoy it.
Unfortunately, those I ride with have scheduled all the trips on holiday weekends so they don't have to take extra days off work. Doesn't work for me as I'm divorced with kids. Bummer, I just got started with the week long trips and now I won't be going. Really wanted to since we had plans on doing a lot of camping this year and riding trails I wanted to get to ride.
Thus, maybe I'll try to change my reasoning again and get back to watching what I eat and get out on my daily rides for exercise instead of focusing on the trips like I had wanted.
