Original would have been white hoods and cable housing too, so I think you can try whatever you like for bar tape. Unless it's plastic like the original, white isn't very practical anyway, what about trying a color that plays well with the copper paint?
Personally, I would have saved those Campy sidepulls for another project. Not only does the rear brake make an orphan of the brazed-on cable stop but the arms on Campy brakes are on the opposite side from the cable guides making for an unavoidable cludge with the routing. In my experience, Weinmann centerpulls with Kool Stop salmon repro pads brake quite well. If you decide to convert, I have the adjustor for the cable stop and will donate it to the cause.
It is a beautiful machine!

Many thanks to member Daka for donating that cable adjuster, trying it for test fit, works perfectly! Since the housing is original and in decent shape, it will stay with the original Weinmanns!

Build Complete!
Completed the build on this International - glued up the tubies and went for a ride!
Brakes back to original Weinmanns with the slotted levers and white Carlton hoods....
White bar tape looks pretty good

it was 65 degrees here today in the Denver area so went on a quick 20 mile shakedown, a few adjustments are needed, but not a bad build...

Thanks Daka, and thanks again for the cable adjustor, it was the little piece that made it all come together! That white cable housing is really pretty unique...

I'd love to join for that meet-up, but I'm in Paris and my International is in Oregon. Doesn't get much more "International" than that.
