Just so i understand for future ref, does this enable the use of longer pads so more braking surface, or does it provide for more caliper reach down to a smaller rim?

Still lucked out and scored the bike but wasn't smart enough to listen to the helper that was down there when he said there was a bunch more "cool" bike stuff in the pile.
Probably could have found the brake pad holders and who knows what else.

They provide about 7mm additional drop. The difference in radius between 27" and 700C rims is only 4mm, so they would work in principle. But I don't see that they are offered with an unthreaded stud, which is what vintage cantilevers would need. @Bob Dopolina, is there any chance this could become an option? I know I'd be interested in a set.

And they work great. Of course they do, its hardly a complex setup, but its still worth confirming- they work great.
I had to order a set for my rear brake because a frame I built had the brake bridge a few mm too high(still swear I measured 10 times before brazing!) and these dropped pads saved me from having to look at cutting material from the brake arm or something similarly dumb.

That would require some new tooling. And, even with our first run, we'd have to make a few hundred pairs. These are expensive to make so with tooling and stock it would be an investment.
Do you think there is actually a demand for this spec? I assume the studs are the same dia across brands? I know they were with more modern cantis but I'm out of my depth on true vintage stuff.

The head of the stud would also have to be secured inside the holder, which would mean a recess of some kind...that would mean the holder would be machined differently...now I am concerned about the amount of material at that point as it has to deal with all the load...
Sorry for thinking out loud here.
I would be interested in feedback as, as I said, vintage cantis are not something I am overly familiar with and I certainly don't have a set here to work with.

I was just wondering as I recently picked up a Panasonic PT-4500 which has 27 inch wheels. I would like the options that a 700 wheelset offers. Perhaps once I get it stripped and rebuilt I'll test fit a wheelset and see where this goes.

How long have these been around? (These or other models/brands that do the same thing.) This is such a duh! solution to a problem that has been around since 700c and 27" were invented. And how did I not know or think of this before? (Well, part of that is getting introduced to Mafac Racers 54 years ago - the brake with serious reach.)

Regarding cantis and studs - I've only used vintage. Mafac both cantis and Racers and a roughly 1983 Shimano canti (stock on a Miyata 610) that is a copy geometry-wise of the Mafac and a really good brake!). Every post pad/shoe I've ever bought has fit and worked just fine save a few that were too long for that bike and interfered with forks/stays. Never saw a post that didn't work. I think a run of (say) Koolstop standard posts should work fine for everybody.
